Asian Inspired Food
In this article Flourish meets recipe developer and content creator Megan Hallett, to conjure up some Asian inspired cuisine with a difference. Here Megan’s recipe of Healing Udon Noodle & Miso Soup influences a healthier and nourishing take upon a meat based meal. As a food writer Megan has crafted three vegan recipes for Flourish magazine which are printed at the back of the magazine, ideal for your kitchen work top! They are all inspired by the traditional Japanese and Indonesian food we sampled upon our travels

1 red onion
1 tbsp avocado oil
½ cup of chopped, firm tofu
1 cup of wild mushrooms
¼ cup of sliced sweet red pepper
½ cup of green beans, sliced
2 tbsps of dark miso paste
2 cups boiling water
100g dry / 1 cup (cooked) udon noodles
Salt and pepper to taste
Coriander and toasted cashews to serve
1. Start by lightly frying the red onion in the avocado oil until soft. Add in the tofu and continue to cook until golden brown.
2. Add the wild mushrooms, red pepper and green beans into the pan. After allowing the veg to cook for a few minutes, add in the boiling water and miso soup, stirring thoroughly until combined.
3. Add in the udon noodles and allow to simmer for a further ten minutes, until the noodles are soft. Serve with a sprinkling of toasted cashews and chopped coriander.
